Her career path took several turns, eventually bringing her back to the industry. Her career in senior living began as an Activities Assistant at a nursing home in Pennsylvania, 28 years ago. She became a director shortly thereafter and has served in several related roles through the years. Margo joined Covenant Living at Mount Miguel in 2014 as the Activities Director. After two years, she shifted to become our Resident Service Director, which is by far her favorite role to date. She enjoys her role immensely, overseeing Life Enrichment and Fitness programming. The residents of Mount Miguel are like a second family to her and she enjoys interacting with them daily, serving them in many capacities. Margo believes in the Common Purpose of Covenant Living of spreading joy and peace of mind to residents, staff, and family members by providing a better way of life.
Cesar Castillo Director of Dining Services
After moving to the US at the age of 16 he became a dishwasher at the La Quinta Resort & Spa and learned everything about European and classical cooking under his mentor. Since then, he’s worked at golf clubs, casinos, and top restaurants nationwide. He is also a pastry chef and ice sculptor – being on the Olympic Culinary team – and hopes to incorporate both into the dining here at Mount Miguel.
Cesar feels that God brought him here and he feels blessed to already be working with such a friendly staff. He looks forward to meeting all the residents as well.
Miles Stillwell Executive Chef
